| To kick things off with recipes here, this is the recipe my family uses to make chocolate chip banana bread. The chocolate chips aren't essential, you can leave them out or replace them with something else. It's kind of a pain to make, but really good. We live at a low altitude so if you're at a higher altitude you'll probably have to make some adjustments for it to come out right, but unfortunately I don't know what kind of adjustments. Ingredients: - 1 cup chocolate chips
- 1 cup softened butter
- 1 and 1/3 cup packed brown sugar
- 3 eggs
- 2 teaspoons vanilla extract
- 2 cups whole wheat flour
- 2 cups white flour
- 1 teaspoon salt
- 1/2 teaspoon baking soda
- 3 teaspoons baking powder
- 1/4 teaspoon nutmeg
- 2 teaspoons cinnamon
- 1 and 1/2 cups mashed overripe bananas
- 2/3 cup black coffee
Instructions - Preheat oven to 350 F.
- Puree the bananas and coffee together until they make a uniform sludge. Set it aside for now.
- Beat the sugar and butter in a large bowl. Add the eggs 1 at a time as you continue beating. Then, add the vanilla extract, beat until light in color.
- Sift together all the ingredients that are colored green in the list twice.
- Add the sifted mixture and banana sludge to the large bowl, alternating them and blending gently as you go. Start and end with the sifted mixture. Do not beat it or overmix it.
- Stir in the chocolate chips.
- Butter 2 loaf pans and put the batter in there.
- Bake for 40-50 minutes, sometimes it will take longer though.
